‘Lean Machine Chicken Skewers’

This week we thought it would be a good idea to make some chicken skewers and it was a good idea because I personally really liked, but not everyone loved it like I did! You can choose whatever you want to put with it. We chose bread and a really nice light and delicious salad that our family has quite a lot!

Making the chicken marinade:

Ingredients:

  • 500g pine nuts
  • 1 garlic clove
  • 1 red chilli
  • 50g parmesan cheese
  • 200g of sunblushed tomatoes in oil (you may need some extra olive oil to make up the 175ml needed)
  • 2 tbsp of flat leafed parsley.

Put the pine nuts in a pan on a medium hear then take them off the heat when you can see they have some colour. Grate the parmesan cheese. Then chop the chilli! Drain the tomatoes of their oil and keep the oil. Put everything together in your blender and blitz until a loose paste.

Marinading the chicken:

The the worst bit…cut the chicken. This was sooo gross because it was so slimy! Then put it in the marinade and leave it in the fridge for at least an hour. Then take out and put it on your skewers and cook on the grill. After that turn it over and cook under the same amount of time (this is tricky). Then chop some parsley and sprinkle over on the plate.

The finished product:

It was so nice in the end. We all liked it and comment if you try it. Next time, we are going to use chicken breasts so that it is bigger than the thighs. Also, we are going to use wooden skewers as they are easier to use.
